Kilkarny mash

A delicious way to enjoy potatoes and cabbage.

Ingredients

Method

  1. Peel the potatoes and place them in a pan with cold water. You can use them unpeeled if you wish, just give them a good scrub.
  2. Cut them into quarters or smallish pieces of equal size (this reduces cooking time). Pour off the first lot of 'rinsing water' and refill with cold water just covering the potatoes.
  3. Bring to the boil, reduce heat and boil for 10-15 minutes, or till soft when pierced with a fork.
  4. Finely slice and chop the savoy cabbage after removing the veins from the outer leaves and place in a bowl.
  5. Pour off the water from the potatoes onto the cabbage. Now add the butter to the potatoes and mash them till smooth.
  6. Break an egg into a mug or small bowl and beat it with a fork. Stir this vigorously into your mash and season to taste.
  7. Pour off the cabbage and stir into your mash.
